We love this recipe from Kristyn at the Lil' Luna blog. To make this one work for our family, I substitute Bob's Red Mill Gluten Free 1:1 Flour. I also poke holes in the cake before putting on the glaze to give it an amazing texture!Gluten Free "Bo-berry" Biscuits
Blueberry biscuits with a glazed icing are AMAZING. I start with Bob's Red Mill biscuit recipe, then head on over to Ashton's recipe at Something Swanky to finish them off.Bob's Best Buttermilk Biscuits:
2 1/2 cups Bob's Red Mill Gluten Free 1:1 Flour
2 1/2 tsp Baking Powder
1/2 tsp Baking Soda
2 tsp Sugar
1 tsp Salt
1/2 cup (1 stick) Butter, chilled and cut into 1/4-inch cubes
2 Eggs
3/4 cup plus 1 Tbsp Buttermilk, divided
Whisk together dry ingredients (flour, baking powder, baking soda, sugar, and salt).Cut in butter with pastry blender until mixture has small pea shapes. In a small bowl, whisk together eggs and 3/4 cup buttermilk. Make a well in the center of the flour mixture and pour in eggs and buttermilk. Stir until soft, sticky dough forms. Now go on over to Ashton's recipe to add the blueberry deliciousness!!
